There’s nothing quite like the sound of sizzling skewers on the barbecue, especially when they’re packed with vibrant vegetables and golden, crispy halloumi. This recipe is the perfect summer side dish or light main, bringing Mediterranean flavour straight to your garden.
It’s a favourite with vegetarians, party guests, or anyone who enjoys something fresh and full of taste.
Ingredients:

1 courgette, sliced

1 red pepper, chopped into chunks

1 yellow pepper, chopped

1 red onion, cut into wedges

200g cherry tomatoes

200g halloumi cheese, cut into cubes

Fresh thyme or rosemary (optional)

Olive oil

Sea salt and freshly ground black pepper

Balsamic glaze (optional but highly recommended)
Method:
1. Preheat the barbecue
Set your barbecue to medium-high heat. Ceramic or kamado-style barbecues such as the Big Green Egg or Kamado Joe will add an extra depth of smoky flavour.
2. Assemble the skewers
Thread the vegetables and halloumi onto skewers, alternating ingredients for a balanced mix.
3. Drizzle with oil
Brush or drizzle the skewers with olive oil and season with salt, pepper and herbs of your choice.
4. Grill until golden
Place the skewers on the grill and cook for 10–12 minutes, turning occasionally, until the vegetables are tender and the halloumi is golden and slightly charred.
5. Serve immediately
Add a drizzle of balsamic glaze if desired, and serve hot off the grill.
Top tip: If using wooden skewers, soak them in water for at least 30 minutes before grilling to prevent burning. Alternatively, invest in reusable stainless steel skewers for convenience and sustainability.
